The aim of the institute of Masters of Wine is to promote the highest level of educational achievement for the wine industry, culminating in the internationally recognized qualification of Master of Wine (MoW). The IMW pursues the goal of excellence in the wine industry and aims to promote the highest quality of wines , highest standards of excellence and conduct in the wine industry.

With these qualifications, coupled with a broad depth of knowledge of wine and its culture, Dr Georgiou has been able to teach and share his love of wine with all levels of wine enthusiastic and wine professionals alike.

Master of Wine (MoW), Dr Ron Georgiou has been appointed to create a three-dimensional 'wine experience' at Hilton Sydney that reflects the best of of Australian and international blue chip and boutique wines. one of only 14 Masters of Wine in Australia and 247 in the world, Dr Ron Georgiou has assembled a selection of over 10.000 expertly chosen bottles. Over 1000 wines were tasted in the selection process.

Glass wine bar offers up tp 30 Australian, French and New World wines by the glass. Dr Ron Georgiou will continue to taste over 200 wines per month to maintain a hand-selected 63:35 split between local and international wines. Glass is the only restaurant in Australia to have had all its wines selected by an independent Master of Wine (MoW).

              2003 Salet Shiraz  14.6% alc.

                  Black cherry red in colour with an intense nose of black fruits, licorice

           and spices: extremely ripe. On the palate, the wine 

          displays low to medium acidity and echoes the nose with black spice

           fruit showing beautiful integration with the intense coconut and

           vanilla characters of the American oak. The palate displays a seamless

           integration and a weighty velvetiness which is round and long.

           The key features here are a huge  explosion of upfront fruit, tremendous

           length and persistence. Although clearly a new world wine, the wine

           making displays old world Finesse  92/100.
